Well, hello there. Two days ago, I have, once again, tried to perfect my peanut butter cookie recipe. I think I may have found it.
Well, I hope I did.
I have been on the hunt for the perfect peanut butter cookies since before I can even remember. With this one, I think I would add just a little bit more peanut butter, and it might just be the perfect recipe. As I said in this post about Peanut Butter Cookies, I am always looking for ways to improve. I did compare the two recipes, like any baker would when dealing with the same ingredients. There is only a couple changes made to the new one. I’m thinking I like this one wayyy better. Just add more peanut butter next time. However, I did not change anything from the original this time around, I only doubled it because 24 cookies is just not enough for my five person household.
The bottoms of these cookies came out absolutely perfect. In all the years I have been baking, I have never had a cookie come out with that amazing golden brown color. They always come out darker. Take a look at this:
I must say, I did have my reservations going into this. I had so many factors working against me with one. Two being, brand new gas oven, and a new recipe. When we moved into our house, our stove is gas as well as the oven. I have had a bunch of cooking/baking firsts in this house. This was my first time making cookies in my new oven.
The bottoms came out perfect. The rest of the cookie did as well. Just like I did with the previous recipe, I flattened the top with a cup to make them more flat. It makes them more even and beautiful. This is my new go-to recipe when I am in dire need of cookies. Or peanut butter.
Without further ado, here is the original recipe from Two Peas & Their Pod.
1 cup butter (two sticks – softened to room temperature)
1 cup peanut butter – smooth
1 cup brown sugar
1 cup sugar
2 large eggs
2 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1. Preheat oven to 350* F.
2. Beat butter and peanut butter until creamy.
3. Add in sugars and mix until smooth.
4. Add in eggs and vanilla. Mix until incorporated.
5. Mix in dry ingredients until completely mixed.
6. Scoop out 1-2 inch balls of dough and place on cookie sheet.
7. Bake at 350* F for 9 minutes or until golden brown. Do not overbake.
8. Let sit on cookie sheet for 5 minutes, then transfer to cooling rack or plate.
