So… Boyfriend’s birthday was yesterday and being the girlfriend I am, I baked him a cake. That took me almost all day long. I had been asking him off and on for a month, what kind of cake he wanted because I had really been into watching cake tutorials on YouTube. I wanted to try my hand at cakes since I have not baked on in soooo long. It did not turn out disastrous, but it did not turn out too great either.
I have been watching Cookies, Cupcakes, and Cardio on YouTube and I love her tutorials. Her actual recipes, maybe not so much. I say that because as I was baking this delicious smelling lemon cake, I was sure it was going to taste great. Just because it smelled so great. Boyfriend said it was good, but I didn’t think so. I think the cake definitely could have been more soft, rather than what it was. Oh well, live and learn. So it was a lemon cake, strawberry filling, and vanilla buttercream.
So the cake wasn’t too bad, the strawberry filling was ok, but the frosting? Wow. That was terrible. I have absolutely no idea where I went wrong because I followed the YouTube video as she went along. I did not change any of the ingredients. I let the butter soften to room temperature. I added the powered sugar first, 2 cups, then milk, then the rest of the powered sugar, then the rest of the milk. It came out soooo runny, so I added more powered sugar, and it was still runny. And grainy. And gross. I put it in the fridge thinking maybe it would thicken up if it was colder. Nope. The top formed into like a crust, but the rest underneath was terrible. It did not thicken, it did not stay on the cake when I tried to put it on there. Mistakes were made. I scraped it off the best I could, and ended up buying store-bought frosting to frost my cake with. But oh man, I wish I would have remembered to take a picture of the terrible frosting before I frosted it with the store-bought.
With the strawberry filling, I did adapt the recipe because the original one called for raspberries. It still turned out good though.
All in all, it was not too bad, even though my boyfriend did not like the store-bought frosting. Not everyone does, that’s okay.

After doing some more research, I will be trying a different recipe, but a completely different person. One who has yet to let me down. 🙂 Hopefully, that one will turn out better!
